Onion pizza

I have to give credit to my Grandfather for this one. And if I am not mistaken, he saw it on a cooking show, probably about 20 years ago. Evidently, this is an after school, late night snack, eat anytime kind of thing. It sure has become that for me.

I know what you are thinking and probably wondering just looking at this picture – but no, this doesn’t kill you with that sharp taste of onions. I would even eat this at lunch, when otherwise I say no to onions on burgers, sandwiches, etc.

Start with at least one big onion cut in half and then slices. Grab a formed pizza disc or whatever you have on hand, like pita or naan bread. Spread onions really thick on top and then drizzle with extra virgin olive oil and sprinkle with good quality sea salt. Pop in the oven at 400 degrees F and cook for about 15 minutes. But watch to see that the onions are starting to break down and get a little bit brown and the crust is nice and crisp.

    I only remember how much I like this pizza when you are here to make it. But I have Naan bread in the fridge, so today is Onion Pizza day!

    Maybe you could subtitle your blog – Mom, this is what you are cooking today…
