Healthy snack

In the spirit of the online workshop I am taking about whole foods, I decided to buy a few new things at the grocery store today and give one of them a whirl. By the time I got home, unpacked the car, put everything away and washed all the fresh produce, I was hungry for a snack.

I decided to try the new ingredient – avocado oil. A simple snack really, air popped popcorn, avocado oil and parmesan cheese. I put this into my recipe builder app and came up with the following nutritional information:

Avocado Parmesan popcorn
Serves: 4


  • 2 tbsps Cheese, parmesan, grated
  • 2 tbsps Oil, avocado
  • 8 cups, popped Popcorn, air-popped (no butter or no oil added) about 1/2 cup unpopped

A variation on this would be to use truffle olive oil instead of avocado oil. That version smells heavenly assuming you like truffles. My son and I do. My husband and daughter do not. They cannot even stand the smell when we use it on our own food.

To go along with popcorn, you need a drink. In this case I made up some cucumber and lemon waters. This is a great thing to have on the counter. When you walk by, the colors catch your eye and you are reminded to drink more water.
